Huevos Rancheros Recipe


3 large tomatoes, core removed and finely diced

½ small red onion, finely chopped

1 medium jalapeno pepper, seeds removed, and finely chopped

1 small lime

Olive oil


Freshly ground pepper

1 can black beans, well drained (15.5 ounce)

½ tsp ground coriander seed

¼ cup olive oil

8 6-inch corn tortillas

4 eggs

1 avocado cut into quarters, skin and seed removed

¼ bunch fresh cilantro


Preheat your oven to 400°F.

Mix the diced tomato, onion, and jalapeno with the olive oil and a little lime juice. Season with salt and pepper and set aside.

In a heavy-based saucepan over a moderate heat, warm the garlic and the ¼ cup of olive oil (just warming without coloring); add in the beans. Using a fork, roughly crush the beans; add in ¼ cup of water and a good pinch of salt. Cook over low heat until warmed through.

In a large dry skillet, toast each corn tortilla on both sides (if you have a stove top griddle pan, even better).

In the same skillet, lay down four of the tortillas; spread each evenly with crushed black beans. Top with remaining tortillas and spoon the salsa over each tortilla top, creating a little well.

Crack an egg into the well of each tortilla.

Place into the oven for approximately 6 minutes (or until eggs are cooked to your liking).

Remove from oven; serve with sliced fresh avocado and cilantro.
